How does the domain expiry check work?

It queries RDAP, the registry protocol that replaced WHOIS, and reads the official expiration event published by the domain's registry. The lookup runs entirely in your browser.

Does an expiry date mean the website will go down?

This is registration expiry, not hosting or SSL. But if the registration lapses and isn't renewed, the domain stops resolving and the site goes offline until it is renewed or, after the grace period, it can be registered by someone else.

30 days or fewer — or today. Renew now; some registries start winding the domain down the moment it lapses.

Expired

Past the date. The site can drop offline, and after the grace period the name can be re-registered by anyone.
